I’m Jeannette, a Mon-Fri Staff Accountant for 35 years with the same company. Additionally, for the last 12 of those years, I’ve also been a weekend “energy-healing” warrior; Reiki Master/Teacher, Acupressurist, Chakra Therapist, Crystal Therapist, and Founding Director/Instructor of both the Reiki Essence Institute Energy Healing School, and the Virginia Beach Acupressure Training Center. Thus, I’ve maintained a seven-day work schedule most weeks of the year, for quite awhile. In looking toward my upcoming retirement from my accounting gig, I’m using this food blog “project” as a path back to the passion for cooking, I once enjoyed, in less hectic times. This blog will also serve as a modern tool to both preserve, and to pass down my fav recipes to my technology addicted offspring.
I’m not anti anything when it comes to food (other than hot peppers and onions). I cook and eat dishes that fall into all categories (e.g., meat, vegan, vegetarian, raw, gluten-free, low/no carb, and Paleo), so you will find recipes from various diets represented within this blog. My tendency has always been to find flavorful recipes and lower their fat content, without losing their yum factor. However, its not my intention to obliterate fats entirely from the recipes I’ve collected or developed, unless they aren’t needed for the taste of a dish. At this point, I feel a personal declaration is needed; I do have a few addictions from the fat realm. Therefore, you will see chocolate, coconut, and cashew nuts among my recipes, in moderation, of course. Nonetheless, and I make no promises, my husband and I seem to lose weight whenever we eat dishes I cook, rather than our more frequent restaurant fare.
